- Allow meat to come to temperature before mixing ingredients (about 15 minutes) 

- Top with a sauce! I like my herby tahini sauce, or a classic tzatziki, muhammara, and hummus, are all complementary options.

- Pickled items add great flavor to this dish. Red onion and gherkins are fantastic additions.

Ingredients

2lbs ground beef

1 small onion, grated 

4 cloves of garlic, minced

2t cumin

2t coriander

1.5t cinnamon

1.5t salt 

0.5t pepper

0.25t nutmeg

0.5t crushed red peppers

Start by taking your meat out of the fridge and letting it rest at room temperature for about 10-15 minutes. Next, begin warming a heavy 4q sauté pan to medium-high heat.. While the pan warms, combine all other ingredients in a large bowl. Once your beef has reached temperature, combine it with the spice mixture. With your hands, mix until just incorporated to keep the meat tender. 

Brown properly. Warm 1-2T of avocado oil in the saute pan, enough to coat. Once coated, press the meat mixture into the pan. Let it cook undisturbed for about 5 minutes. Flip in sections, and press again, cooking another 3 minutes. 

 

Break + Finish. Break beef into loose crumbs. Cook until no pink and edges are browned and slightly crisp. About 10 minutes.  

Taste + Adjust. Remove from heat and let sit for at least 2 minutes. Taste for salt. 

Optional Finishing Touch

- squeeze of lemon or

- tiny splash of red wine vinegar
