Spinach & Broccoli Lemon Pasta
 

> rotini pasta - I use brown rice rotini to make recipe gf.

> 1-2 crowns of broccoli

> 2C spinach

> juice and zest from 1 lemon

> 3-4 cloves of garlic, minced

> butter 2-4T or oil of choice

> 1/2C hummus of choice - I use a basil hummus 

> red pepper flakes to taste. I use about 1/4-1/2t

> s&p to taste

> 1-2t onion powder

Mise en place: chop and mince garlic, prep broccoli heads. Boil water for pasta and cook according to instructions. Reserve at least 1C of pasta water

In a large saute pan, bring to temperature then add about 2T of butter or oil of choice. Warm for about 30 seconds, then add in minced garlic and red pepper flakes and cook until just fragrant, about 30 seconds. Add in prepped broccoli, sprinkle in onion powder and s&p, and lemon zest and sauté until softened. Next, add in spinach and another sprinkle of onion powder and sauté until wilted. Add in hummus, lemon juice, and thin out sauce with pasta water.  Once you have your pasta sauce to your liking, add in pasta. Top with fresh parmesan or nutritional yeast and enjoy warm.
